EAT YOUR BEETS! ~

 

I HAVE A DELICIOUS SALAD RECIPE TO SHARE TODAY….. RUBY RED BEETS AND ORANGES, TOSSED WITH HONEY GOAT CHEESE, TENDER BOSTON BIBB LETTUCE, A SPRINKLING OF FRESH MINT AND HOMEMADE VINAIGRETTE. MAKE THIS WHEN YOU NEED TO DO SOMETHING NICE FOR YOURSELF!

  • TO START, YOU WILL NEED ABOUT 8 BEETS, PRE-COOKED, (OR IF YOU WANT TO BE  TORTURED YOURSELF, BOIL AND COOK THEM YOURSELF),  AND CUT INTO EIGHTHS
  • A LOG OF HONEY GOAT CHEESE, (TRADERS JOE’S CARRIES A GOOD ONE),CRUMBLED.  IF YOU CAN’T FIND HONEY GOAT CHEESE, JUST USE PLAIN.
  • A HEAD OF BOSTON BIBB LETTUCE
  • I LARGE NAVEL ORANGE, PEELED AND CHOPPED INTO BITE SIZED PIECES
  • I SMALL PACKAGE OF FRESH MINT

AND FOR THE VINAIGRETTE

  • I TBSP DIJON MUSTARD
  • 3 TBSP CHAMPAGNE VINEGAR (OR ORANGE VINEGAR..AGAIN, TRADER JOE’S HAS A GOOD ONE)
  • KOSHER SALT, FRESH GROUND BLACK PEPPER
  • A TBSP OF HONEY
  • TWO SPRIGS OF THYME
  • 1/2 CUP GOOD EXTRA VIRGIN OLIVE OIL

IN A SMALL BOWL, WHISK TOGETHER THE MUSTARD, VINEGAR, A PINCH OF SALT, FRESH PEPPER TO TASTE.  WHEN WELL MIXED, ADD THE HONEY AND OLIVE OIL AND CONTINUE TO WHISK UNTIL IT’S ALL EMULSIFIED.   POUR INTO A SMALL JAR AND INSERT THE SPRIGS OF THYME.  SHAKE WELL, AND LET SIT IN THE FRIDGE FOR AT LEAST FOR ABOUT 20 MINUTES TO CHILL.

WHEN READY, JUST PLACE  A HANDFUL OF LETTUCE ON A MEDIUM SIZED SALAD PLATE, SPOON ON THE BEETS, THE ORANGE PIECES, ADD SOME GOAT CHEESE CRUMBLES, SPRINKLE WITH CHOPPED MINT AND DRIZZLE THE VINAIGRETTE.  I HAVE TASTED THIS SALAD IN PARIS WITH GRAPEFRUIT SLICES AS WELL, TRULY DELICIOUS.
